 We are going to start with one of our favorite Easy Mexican Recipes. This is a recipe for:

Chicken Enchiladas

It is very easy, and these chicken enchiladas never fail to please.  We get a lot of requests for easy Mexican recipes and it doesn’t get a lot easier than this.  But the best thing about this recipe vs. other easy Mexican recipes you may find, is that these are full blown Chicken Enchiladas!  It will appear to your guests that you slaved over these for hours and hours.  In fact, the preparation time is very reasonable. Particularly given the great outcome. Like most easy Mexican recipes, these chicken enchiladas make for a hearty meal. They are basically great on their own, with a few modest embellishments such as salsa and sour cream.  In other words, there is no reason to knock yourself out creating a bunch of irrelevant side dishes to go along with these chicken enchiladas. They are a self contained meal.  Make them in advance and freeze them in a 9x13 pan and you will end up with a great Mexican dish in a hurry when you are strapped for time, like most of us are.  If you like, you can add a side of our Easy Mexican Rice .

So here we go:  Our Easy Chicken Enchilada Recipe.

Easy Chicken Enchilada Recipe

2 cans cream of chicken soup
1 can (4 oz) chopped green chilies
1 pint sour cream
1 medium onion chopped
1 lb grated cheese
12 flour tortillas
6-8 chicken breasts cooked and cut into small chunks

Put chicken soup, chilies, and sour cream in large saucepan. Stir over medium heat until warm.  Pour just enough of the sauce into a 9x13 Pyrex pan to cover bottom of pan.  Reserve half of the remaining sauce and half of the cheese and set aside.  Spread sauce on each tortilla and then add onion, cheese, and chicken. Roll each tortilla up tightly and place in pan directly on top of sauce.  Arrange rolled tortillas close together. So they fit nicely in pan.  Pour remaining sauce over the tortillas and sprinkle remaining cheese over the top of tortillas.

Bake in a preheated 350 degree oven for 20 to 30 minutes till bubbly.

Serve with salsa verde, sour cream and guacamole on the side. Mexican Rice can be added along with hot refried beans to round out this delicious Mexican meal.
