 Here is a simple and Easy Mexican Rice Recipe.  And it is a really good and simple side dish recipe. This four step process is fool proof and will result in a great Mexican Rice Dish every time.  This Mexican rice recipe can be adapted to accommodate virtually any number of guests.  And the best part is that this Mexican rice recipe will be ready to eat in about 20 minutes!  Enjoy!

Step 1

Cover the bottom of a large saucepan with light olive oil (about 1 – 1 ½ Tbsp).  Heat the oil on a medium to medium high heat. It needs to be hot, not just warm. But remember that it doesn’t take long. Sprinkle a few drops of water on the pan to see if it sizzles and evaporates. This is when it is good and hot.

Step 2

Add Rice in preferred quantity.

Note: each cup of rice yields about 3 cups of cooked rice when done.  Try about two cups for a medium dish of cooked rice. If you are cooking for just a couple of people use 1 cup.  I use between a quarter and a half cup for a single serving – depending on what it is being served with.

Stir rice constantly so that it becomes coated with the hot oil. The rice will become somewhat translucent and appear hot and brittle. Stir and cook for 1-2 minutes.

Step 3

Add 1 clove of minced garlic and ¼ cup chopped onion.  This is for a two cup serving. You can do less or more depending on the amount of rice. You are cooking. 

Note: prepare these in advance so you can drop them in at the appropriate time

Cook and stir for another 1-2 minutes.

Step 4

Remove rice from burner and add hot water to pan until it is filled about an inch and a half or two inches above the rice.  Return the pan to hot burner. Add 1 8 oz can of tomato sauce and about 2 Tbsp of chicken boullion. 

Again:  This is for a two cup of rice recipe.  Add or subtract if you are cooking more or less rice.

When the mixture begins to boil, cover the pan and reduce the heat to simmer.  Leave covered and cooking on simmer for about 20 minutes. Do not stir.

When the rice is done the water will be all absorbed and the rice will be fluffy.  Remove from heat and place in a covered serving dish to keep warm. Or leave in pan till ready to serve.
